Landing at Incheon near midnight - taxi or wait until morning?

Me and my husband land at Incheon around 11:40pm next month and our guesthouse is in Hongdae. From what I read the airport train stops not long after that, so is a taxi the only way at that hour, or is waiting in the terminal until morning normal? I have never used Kakao T before - can I set it up with a UK card, or do I need a Korean number first? Also thinking of sorting an eSIM before flying so the app actually works the moment we land, but not sure if that is overkill. Anyone done this arrival time recently?
